Cornflake cookies are an incredibly easy and delightful no-bake treat that will quickly become a family favorite. Your kids will love getting involved in the process as they transform one of their breakfast cereals into a scrumptious dessert.

I like to refer to these cookies as an elevated twist on classic Rice Krispies treats, combining crispy cornflakes with a sweet and gooey peanut butter mixture to create a deliciously satisfying snack that is both fun to make and even more enjoyable to eat.

RECIPE FAQs-
- Can I add some extra inclusions when making the cookies?
- If you would like to add extras to the cookies, then you most definitely can. You could add things like marshmallows at the end after adding the cornflakes. You could also add peanuts or almonds for extra crunch.
- How can I keep my cookies from setting them up in the pan before I get them all dipped?
- One thing that can help is to use a pan like a cast iron that will hold heat longer, giving you more time to get them scooped before they start to set up.
- Can I coat them in chocolate after they cool?
- Yes, if you would like to coat them in chocolate, you can. They would be good either way. Butterscotch is also another option.

What are substitutions that I can make?
- Light corn syrup – can be switched for honey.
- Peanut butter—If you have a peanut allergy, you can use almond butter. It will change the flavor of the dish but still be good.
- Cornflakes – You can use another type of cereal like corn or rice Chex, but it will change the original flavor.
How should I store my cookies?
- Cornflake cookies should be stored in an airtight container at room temperature for 6-7 days.
