Cornflake Cookies

Cornflake cookies are delightful no-bake treats made with peanut butter that offer a wonderfully crunchy texture thanks to the cornflakes.

Equipment

  • Sheet pan x 2
  • Parchment paper
  • Medium pot
  • Whisk
  • Spatula
  • Large spoon

Ingredients

  • ½ cup light corn syrup
  • ½ cup granulated sugar
  • ¾ cup creamy peanut butter
  • 1 tablespoon salted butter
  • 3 cups cornflakes cereal

Instructions

  • Line two sheet pans with parchment paper.
  • In a medium pot, combine the corn syrup and granulated sugar. Bring the mixture up to a boil over medium-high heat. Add in the creamy peanut butter and butter. Stir until the peanut butter is completely melted. Remove the pot from the heat and mix in the cornflakes cereal.
  • Scoop about a tablespoon worth of the cereal mixture onto the prepared sheet pans and slightly flatten them out.
  • Allow the cookies to cool for at least 30 minutes before serving.

Notes

If your cookies are too hard, it could be that they are overcooked or have too many cornflakes in them. It is a very fast-paced cooking process, so having all of your ingredients ready and the sheet pans set up before you get started will help. That way, you do not have to worry about overcooking anything while you’re measuring.
