Bring a large pot of water to a boil over high heat. Add the lo mein noodles and cook according to package instructions. Reserve a quarter cup of the cooking water.
In a large mixing bowl, whisk together the soy sauce, tahini, sesame oil, chili oil, garlic, and ginger. Add the cooked noodles to the sauce mixture and toss to combine. If the sauce is too thick, add a tablespoon of the reserved cooking water at a time until you reach your desired consistency.
Plate the noodles and garnish with scallions and sesame seeds.
