Sour Cream Chicken

I have been testing different combinations of three-ingredient recipes (plus spices), and this sour cream chicken has been on repeat a lot in my house lately. The kids love the flavor, and I love how easy it is to make. When you add the cheese and spices to the sour cream, it transforms it into the perfect topping, adding a burst of flavor to the chicken.

FAQs (Because Life’s Too Busy for Guesswork)

If I prefer extra cheesy dishes, is it okay to double the amount of parmesan cheese called for, or top it with another type of cheese?

If you want to double the cheese for an extra-cheesy flavor, then you're more than welcome to do so. You can also add another cheese, such as mozzarella, if you prefer. If you want to add another cheese to the top, I would recommend waiting until closer to the end so that you don't burn the cheese.

Is it better to use full-fat sour cream or the light version?

You can prepare it up to the point of baking, then cover it with plastic wrap and store it in the refrigerator until you're ready to bake. You may need to add 5-10 minutes to the baking time, as the dish will start at a slightly cooler temperature.

Can I use frozen chicken breast?

If you want to use frozen chicken breast, that is fine, but ensure it is completely thawed before preparing the dish. Chicken that has been frozen tends to release a lot of liquid when it thaws, and that can cause your sour cream topping to slide off and not stick to your chicken as well.

What are substitutions that I can make?

  • Parmesan cheese – you can also use an Asiago cheese, grated if needed.
  • Italian seasoning—You can make your own Italian seasoning, or if you want to change things up a lot and add some spice, you could also switch to Cajun seasoning.
  • Chicken breast – another option would be to use boneless, skinless chicken thighs.

How should I store my leftovers?

  • Sour Cream Chicken should be stored in an airtight container in the refrigerator for up to 4 days. To reheat, place in an oven-safe dish and heat at 350°F for 20 minutes. Cover to prevent drying out.

Notes

For extra cheesy flavor, feel free to double the Parmesan or add another cheese like mozzarella. If adding cheese on top, wait until the end of baking to avoid burning.
Full-fat sour cream is best for cooking, but light sour cream will work in a pinch.
You can assemble the dish ahead of time and refrigerate it before baking. Add 5–10 minutes to the baking time if starting from cold.
Frozen chicken breast is fine to use, but make sure it’s fully thawed first. Excess moisture from thawing can cause the sour cream topping to slide off.
