Directions

Line a 9-inch square baking pan with parchment paper.

Create a large double boiler by filling a small pot with about 2 inches of water. Place a large glass mixing bowl over the top. Add the chocolate chips, sweetened condensed milk, and butter to the bowl. Turn the heat to medium-high and stir the mixture until the chocolate has melted. Mix in the hot cocoa mix and vanilla extract. Remove the mixing bowl from the heat and stir in 2 cups of mini marshmallows.

Transfer the fudge to the baking pan and spread it evenly. Sprinkle the remaining marshmallows on top and gently press them into the fudge.

Place the fudge in the refrigerator for 3 to 5 hours, or until it is set.

Cut into 1-inch squares and enjoy.

How do you serve this?

  • Serve your Hot Chocolate Fudge with a tall glass of cold milk, or with a hot cup of coffee or hot chocolate.

FAQs (Because Life’s Too Busy for Guesswork)

Are the marshmallows that are stirred into the fudge supposed to melt and dissolve into the fudge?

No, they should keep their shape for the most part. So, no need to worry that they don’t melt. It is in the spirit of having marshmallows in your cocoa that they are mixed in with the intention of keeping their shape.

Can I add different toppings or even extra toppings?

You could change the part of the marshmallows that goes on top for something different, like crushed peppermint candies, or nuts such as pecans or walnuts. You could also add those toppings to the top with the mini marshmallows. There is also the option of a fudge drizzle over the top of it all.

Why is my fudge so grainy?

Generally, when fudge is grainy, it is because the sugars have been overcooked. To avoid this, you want to make sure that you only heat the chocolate chips, butter, and sweetened condensed milk to the point that the chocolate chips are fully melted and everything is incorporated. Once that happens, you want to remove it from the heat. Any longer than necessary could result in overcooked sugars and grainy fudge. This fudge naturally has a slight texture due to the hot chocolate mix being incorporated.

How can I slice the fudge to get smooth and clean cuts?

You will want to ensure your fudge is completely cooled and set before you cut it into squares. It also helps to have a very sharp, straight-blade knife. But another trick you can try is to take your sharp knife, run it under extremely hot water, then dry the blade, and slice the fudge immediately.

What are substitutions that I can make?

  • Milk chocolate chips – Dark chocolate chips are also an option if you want to cut the sweetness a bit.
  • Salted butter – If unsalted is all you have on hand, just add a small pinch of salt to the bowl when you add the butter.
  • Hot chocolate packets – The brand is not that important, but the amount is.
  • Vanilla extract – If you would like to have a mint hot chocolate fudge, you could use a mint extract instead of the vanilla.

How should I store my leftovers?

  • Hot Chocolate Fudge should be stored in an airtight container at room temperature for up to a week. If placed in the refrigerator, it can last two weeks. If you want it to last longer, you can freeze it for 3-4 months. But if you were to vacuum pack, you could make it last 5-6 months in the freezer. Defrost in the refrigerator overnight before serving again.

Equipment

  • 9-inch square baking pan
  • Parchment paper
  • Small pot
  • Large glass mixing bowl

Ingredients

  • 3 cups milk chocolate chips
  • 1 14-oz can sweetened condensed milk
  • 3 tablespoons salted butter
  • 2 1 oz packets hot chocolate mix
  • 1 teaspoon vanilla extract
  • 3 cups mini marshmallows divided

Instructions

  • Line a 9-inch square baking pan with parchment paper.
  • Create a large double boiler by filling a small pot with about 2 inches of water.
  • Transfer the fudge to the baking pan and spread it evenly. Sprinkle the remaining marshmallows on top and gently press them into the fudge.
  • Place the fudge in the refrigerator for 3 to 5 hours, or until it is set.
  • Cut into 1-inch squares and enjoy.

Notes

  • The marshmallows stirred into the fudge should keep their shape—no need for them to melt. They’re meant to mimic marshmallows in hot cocoa.
  • You can swap or add toppings like crushed peppermint, pecans, walnuts, or even a fudge drizzle along with the mini marshmallows.
  • Grainy fudge is usually caused by overheating. Melt chocolate chips, butter, and sweetened condensed milk just until smooth, then remove from heat. Note: the hot cocoa mix adds slight texture naturally.
  • For clean cuts, wait until the fudge is fully cooled and set. Use a sharp, straight-blade knife, or run it under hot water, dry it, and slice immediately.
