Rolo Cookies

Rolo Cookies are soft, chewy chocolate cookies with a gooey caramel Rolo hidden in the center for the best little surprise in every bite.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 32 Rolos candies

Instructions

  • Preheat the oven to 350°F and line two sheet pans with parchment paper.
  • In a medium mixing bowl, combine the flour, cocoa powder, baking soda, and salt.
  • In the mixer bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy, 3 to 4 minutes. Add the eggs, one at a time, then mix in the vanilla extract. Slowly mix in the flour mixture just until incorporated. Place the dough in the refrigerator for 1 hour.
  • Scoop the dough into 1-inch balls and press a Rolo into the center of each ball, covering the Rolo with the cookie dough.
  • Place the cookies on the sheet pans about 2 inches apart.
  • Bake for 10-12 minutes until the edges are set. Transfer the cookies to a cooling rack and allow them to cool.

Notes

  • Use natural unsweetened cocoa powder.
  • Chill the cookie dough for 1 hour before shaping the cookies.
  • Completely cover each Rolo with cookie dough so the caramel does not leak out.
  • Leave about 2 inches between cookies on the baking sheet.
  • Bake just until the edges are set so the centers stay soft.
  • The caramel center is gooiest while the cookies are still slightly warm.
  • Store cooled cookies in an airtight container at room temperature for up to 1 week.
  • Freeze baked cookies for up to 3 months.
