Equipment

  • Measuring cups and spoons
  • 2 Sheet pans
  • Parchment paper
  • Medium Saucepan
  • Cookie scoop or large spoon

Ingredients

  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/2 cup salted butter
  • 1/4 cup cocoa powder
  • 3 cups quick-cooking oats
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract

Instructions

  • Line 2 sheet pans with parchment paper.
  • In a medium saucepan, combine the granulated sugar, milk, salted butter, and cocoa powder over medium-high heat.
  • Bring the mixture to a full rolling boil. Once boiling, continue cooking for 1 minute.
  • Remove the saucepan from the heat.
  • Immediately stir in the quick-cooking oats, peanut butter, and vanilla extract until the oats are fully coated.
  • Scoop heaping tablespoons of the mixture onto the prepared sheet pans. Gently press down to shape them into cookies.
  • Allow the cookies to cool completely and set before serving.

Notes

  • Measure the oats, peanut butter, and vanilla before beginning so they're ready to add as soon as the saucepan comes off the heat.
  • Start the 1-minute timer only after the chocolate mixture reaches a full rolling boil.
  • Do not boil the mixture longer than 1 minute after it reaches a full boil. Overcooking can cause the cookies to become dry and crumbly.
  • The cookies generally take about 30 minutes to set, but they may need up to an hour depending on your kitchen.
