Total Time:8 hours 10 minutes

Equipment

  • Colander
  • Paper towels
  • Large mixing bowl
  • Measuring cups and spoons
  • Mixer and bowl
  • Spatula

Ingredients

  • 15 ounces ricotta cheese
  • 8 ounces cream cheese softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon almond extract
  • 1 cup chocolate chips
  • 6-10 waffle cones

Instructions

  • Line a colander with paper towels and place it in a large mixing bowl. Add the ricotta cheese to the colander and let it drain in the refrigerator overnight.
  • In the bowl of your mixer, beat the drained ricotta and cream cheese together until fluffy.
  • Slowly mix in the powdered sugar until well combined. Stir in the almond extract and chocolate chips.
  • Serve with pieces of the waffle cones and enjoy.

Notes

• Don't skip draining the ricotta. It creates a much thicker, creamier dip.
• Full-fat ricotta provides the best texture.
• Make the dip no more than 24 hours ahead for the freshest flavor.
• Stir before serving if any separation occurs.
• Serve with waffle cone pieces, vanilla wafers, graham crackers, strawberries, or pretzels.
