Line a colander with paper towels and place it in a large mixing bowl. Add the ricotta cheese to the colander and let it drain in the refrigerator overnight.
In the bowl of your mixer, beat the drained ricotta and cream cheese together until fluffy.
Slowly mix in the powdered sugar until well combined. Stir in the almond extract and chocolate chips.
Serve with pieces of the waffle cones and enjoy.

• Don't skip draining the ricotta.
