Equipment

  • Knife
  • Cutting board
  • Vegetable peeler
  • Measuring Spoons
  • Medium Saucepan

Ingredients

  • 1 1/2 pounds carrots peeled and sliced into 1-inch rounds
  • 2 tablespoons salted butter
  • 2 tablespoons dark brown sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  • Add the carrots to a medium saucepan and fill with enough water to cover them.
  • Place the saucepan over medium-high heat and bring to a boil. Boil for 5 to 6 minutes, until the carrots are fork-tender but still have a little bite remaining.
  • Drain the water from the saucepan and return the carrots to the stove.
  • Add the salted butter, dark brown sugar, garlic powder, salt, and pepper.
  • Continue cooking, stirring occasionally, for 5 to 6 minutes until the brown sugar has dissolved and the glaze begins to thicken and lightly coat the carrots.
  • Remove from the heat and serve warm, spooning any remaining glaze over the carrots.

Notes

  • Don't overcook the carrots during the boiling stage. They should hold their shape because they will continue cooking in the glaze.
  • The finished glaze should be glossy and lightly coat the carrots rather than form a thick caramel-like sauce.
  • For make-ahead preparation, boil the carrots up to 48 hours in advance, then drain, cool, and refrigerate. Finish cooking with the butter, brown sugar, and seasonings before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat in the microwave or in a saucepan over medium heat with a splash of water, stirring frequently until heated through.
  • Freeze in a freezer-safe airtight container for up to 2 months for best quality. Thaw overnight in the refrigerator before reheating. Texture may soften after freezing.
