- A fun way to serve your Taco Soup could be to create a taco soup bar. Set out several different toppings. Like green onion, salsa, tortilla strips, sour cream, shredded cheese, and fresh diced tomatoes. Let everyone get a bowl and top it to their liking.

If you like a lot of meat in your dish, it is okay to add more or even double the amount called for. You will need to add 1/2 cup more broth to the soup as well to account for it while it is cooking.
The broth will be thinner. It may have some viscosity to it from the beans and the starches they release, but it will be more of a thinner broth. However, if you want it to be thicker, you can take out a quarter cup of the beans and blend them, then stir them back in to thicken the broth, or you can mix a cornstarch slurry with 2 tablespoons of water and 1/2 teaspoon of cornstarch and pour it in the last 10 minutes of cooking.
You can use frozen corn. You can also use fire-roasted corn to add to the soup's smoky flavor.
It has a little bit of a bite to it, but I don’t know if I would say it is spicy. If you are worried about it for more sensitive pallets, you can substitute one can of the Rotel for one can of petite diced or crushed tomatoes. Another option is to replace both cans. However, I think one will take the heat out and still leave plenty of the flavor.
What are substitutions that I can make?
- Ground beef – ground chicken, turkey, or veal would all be good alternatives.
- Rotel – Pettie diced tomatoes are a good substitute if you are not a fan of Rotel.
- Beef broth – You can also use beef stock if you need bouillon and water to make a broth.
- Pinto beans – ranch-style beans make a good substitute, but you will not want to drain and rinse them.
- Taco seasoning – If you are using homemade taco seasoning, you will need to use 3 tablespoons.
- Ranch seasoning – 3 tablespoons of homemade ranch seasoning will also work.
How should I store my leftovers?
- Crockpot Taco Soup should be stored in an airtight container in the refrigerator for 4-5 days.
- To Freeze: Completely cool the soup, then place it in a freezer-safe Ziploc bag and remove as much air as possible. Be sure to label and date the bag and freeze it for up to 3 months. Thaw it overnight in the refrigerator before reheating. Note: Laying the bag flat while freezing will take up less room in the freezer once frozen.
- To Reheat: Place your leftovers in a size-appropriate pot on the stovetop on medium-low heat and stir until thoroughly heated. You can also microwave a single serving for 45-60 seconds at a time, stirring as needed until heated.

Add the ground beef to a large skillet over medium heat. Using a wooden spoon, break the meat apart and cook until browned. Drain off any excess grease. Transfer the beef to your crockpot.

Cover and set it to low for 3 to 5 hours.

Instructions
- Add the ground beef to a large skillet over medium heat. Using a wooden spoon, break the meat apart and cook until browned. Drain off any excess grease. Transfer the beef to your crockpot.
- Combine the beef broth, Rotel, black beans, pinto beans, corn, taco seasoning, and ranch seasoning in the crockpot.
- Cover and set it to low for 3 to 5 hours.
Notes
- The broth is intended to be on the thinner side, although it may thicken slightly due to the starches in the beans. If you prefer a thicker broth, blend a quarter cup of the beans and stir them back in, or mix a slurry of two tablespoons water with half a teaspoon of cornstarch and add it during the last 10 minutes of cooking.
- Frozen corn works just as well as canned. Fire-roasted corn is a great option if you want to enhance the soup’s smoky flavor.
